Pumpkin Pie Protein Overnight Oatmeal. What?? How good does this look?? ๐ I like almost anything pumpkin flavor!!
3 Tbsp pumpkin
1/2 cup unsweetened almond milk
1/4 cup plain low fat Greek yogurt
1/4 tsp pumpkin spice
1/8 tsp salt
2 tbsp baking stevia
1 cup old fashioned oats
1/4 cup protein powder
Optional 1 tbsp maple syrup or honey, chopped pecans or nuts for topping.
In a small bowl mix all the ingredients. Divide into 2 mason jars, bowls or mugs. Cover and refrigerate overnight (or for at least an hour). Top with syrup/honey or pecans for crunch if desired.
