Eggroll in a bowl: Paleo & Low carb!

This is an ultimate favorite recipe!!!
Be sure to save and share for easy referance!

EGG ROLL IN A BOWL (Paleo and Low Carb)

Ingredients

  • 1 1/2 lbs organic ground beef
  • 2 med onions (finely chopped / minced)
  • 1 1/2 Tbsp organic unrefined sesame oil 
  • 1 1/2 tsp organic ginger (powdered)
  • 1/2 tsp organic black pepper (omit for AIP)
  • 1 tsp organic garlic granules (or 4 cloves garlic, minced)
  • 1/2 tsp salt (or to taste)
  • 1/16 tsp stevia extract (optional - substituting with another sweetener will work as well)
  • 1/2 Tbsp organic crushed red pepper (optional)
  • 2 Tbsp organic white wine 
  • 1/3 cup organic beef broth 
  • 9 cups shredded cabbage
  • 1 1/2 cups shredded carrot
  • 4 tsp organic tamari (or to taste)
  • Green onion for garnish (optional)

Instructions

  1. Place meat in large pan and cook until browned.
  2. On medium high heat, add the onions and sesame oil. Cook until lightly browned.
  3. Reduce heat to medium.
  4. Add spices, sweetener, red pepper, wine, and broth to the pan and stir well.
  5. Add the cabbage and stir to coat.
  6. Cook, stirring frequently until the cabbage slightly wilts.
  7. Add carrots and cook for 2-3 minutes until soft.
  8. Add tamari to taste and adjust flavorings as desired.
  9. Serve plain or over rice or cauliflower rice.
  10. Garnish with green onions if desired.

I can NOT even believe that today is the day that we drop this beautiful girl off for college.... I woke up at 4:30am with my mind racing!! So of course I googled “how to survive when your child leaves for college” and I actually got a ton of great tips for me... BUT loved these words of wisdom for her as she embarks on this next big adventure! I also think these tips are true for all my #girlieboss ladies in all stages of their lives!

August thoughts...

New fresh month... THANK GOD!! I’m ready to be done with July!! I did not like how that month ended😳

As you know every month I write down my goals/dreams for the month. Here’s my plan for August -- and what are YOUR goals??? Connect with me today and share!

1. Meditate πŸ§˜πŸ»‍♀️ I’m not that great at it, but the Doctor said it’ll really help Darren too. So I’m not giving up and I’m going to get Darren to do it too.
2. Be present in every momentπŸ™πŸ»
3. Get back to healthy eatingπŸ₯¦ I’ve been doing some serious stress eatingπŸ₯–πŸΏπŸͺ... which honestly doesn’t help anything
4. Get back to my business!! So thankful I’m in a position where I can take time off whenever needed.

6. Look into doing a podcast with Darren🎀.
7. Help and empower 20 women to become their personal bestπŸ’ƒπŸΌ!!
8. Help get Maddie ready to head off to collegeπŸ™ˆ.
9. Have a killer boot camp that begins on Monday!! I still have space if you’re interested in getting back on track with your health and fitness.
