Need a delicious salad idea for your meal prep rotation? Try this one - loaded with veggies, high fiber, and low sugar; perfect for LIVING with cancer! ๐
Ingredients:
2 cups cauliflower
2 cups broccoli
1 cup red cabbage
1 cup carrots
1 1/2 cups fresh parsley
2 celery stalks
1/2 cup almonds
1/2 cup sunflower seeds
1/3 cup raisins (I’ll leave those out)
For the dressing:
3 tbsp olive oil (I️ use avocado oil)
1/2 cup lemon juice
1 tbsp fresh ginger, peeled & grated
1/2 tsp Himalayan salt
Basically chop everything or toss them in a food processor.
