Halloween STUFFED PEPPERS!

Halloween = sugar. Chocolate bars, toffees, candies… my teeth start to hurt just thinking about it! What I love about this stuffed peppers recipe is that it’s a festive twist on a savory dish. You get to feel the spirit of Halloween, with a little less sugar! And they are ADORABLE!
You’ll want a sharp knife that is small enough to make tiny cuts - the fun part really is carving the bell peppers!
Ingredients
  • 4 medium orange bell peppers
  • 2 tsp olive oil

  • 1 lb. raw 93% lean ground turkey
  • ½ medium onion, chopped
  • 1 clove garlic, finely chopped
  • 1 tbsp chili powder
  • ½ tsp ground cumin
  • Ground black pepper, to taste
  • 1 (8 oz) can tomato sauce, no sugar added
  • 1 cup black beans drained, rinsed
  • 1 cup cooked brown rice
  • ¼ cup water
  • ½ cup shredded sharp cheddar cheese
Instructions
  1. Slice stem end off peppers (save for later). Remove seeds and veins from peppers. Cut a jack-o-lantern face out of one side of each pepper. Stand peppers upright in baking dish and set aside.
  2. Preheat oven to 400 F.
  3. Heat oil in large nonstick skillet over medium-high heat.
  4. Add turkey; cook, stirring frequently, for 4-5 minutes, or until almost browned.
  5. Add onion; cook, stirring frequently, for 4-5 minutes, or until onion is translucent.
  6. Add garlic; cook, stirring frequently, for 1 minute.
  7. Add chili powder, cumin, pepper (if desired), tomato sauce, and beans. Cook, stirring occasionally, for 4-5 minutes. Remove from heat.
  8. Add rice, mix well.
  9. Fill peppers with turkey mixture. Top with reserved stem end of peppers. Add water to the baking dish. Cover with foil.
  10. Bake peppers for 12-15 minutes or until tender-crisp.
  11. Remove stem top of peppers, sprinkle evenly with cheese. Bake for 2-3 minutes, or until cheese is melted.
  12. Replace tops and serve!
Container Equivalents: 2 green, 1 red, 1 yellow, ½ blue, ½ tsp.

Top 6 Intermittent Fasting mistakes!

6 Top Intermittent Fasting Mistakes πŸ‘‡πŸ»
πŸ’’Mistake #1
Making drastic changes! If you normally eat every 2 to 3 hours and then suddenly shrink your eating window to an 8 hour window, you’ll feel hungry all the time and dis outraged. Instead, go slow and gradually stretch out the number of hours you go fasted.
πŸ’’Mistake #2
Overeating when your fast ends. The way to fix this is plan ahead. Prepare a healthy meal that’s ready when your eating window begins.
πŸ’’Mistake #3
Drinking the wrong liquids. Most people drink water, black coffee or tea while fasting. If you’re adding cream or sugar to your coffee you’re breaking your fast.
πŸ’’Mistake #4
Relying on unhealthy foods. IF focuses on when you eat, but it’s also super important to be eating healthy foods during your eating window. If you’re eating processed food in lieu of Whole Foods that comprise a well balanced diet, IF wont help you reach your health goals.
πŸ’’Mistake #5
Being sedentary. If you’ve always had a preworkout snack, exercising while fasting may seem foreign!! It did to me in the beginning! BUT your body has plenty of energy stored in your body fat to use when there’s no food.
πŸ’’Mistake #6
Letting fasting rule your life. You might be inclined to opt out of dinner with friends or say no to parties because your fasting... Intermittent fasting can be flexible! You can move your hours around OR don’t stress about it!! Your metabolism likes a little change every once in awhile anyway!! We have one life!! Do the things that bring you joy.

Personal Development TIP

FRIDAY Personal Development Success Tip:

Reflect on the positive moments of the day.

Whether your day was amazing or a total hot mess, take some time before bed to reflect on anything positive that happened. You can journal, meditate, talk with a friend, or just sit quietly and replay the day’s brighter moments.
Maybe your crushed a presentation at work, maybe you rocked your morning workout, or maybe your kid gave you the best hug after school.
Creating a nightly habit of turning your attention toward the positive moments of the day, however small or insignificant you might think they are, allows you to feel more gratitude and appreciation in your life.
